Unfortunately, they will count as two opt-outs. Opting out of both and counting it as one would make things more complicated and be unfair to people who don't want to opt-out of weres and thus technically get one less opt-out than people who do. As the game was conceived, only two opt-outs were allowed, and this limit was upped to five already with the consideration that someone might want to opt-out of every creature in a given category (weres, undead, venomous, etc).
