If I app a second character, am I allowed to request that they become something my first character isn't in addition to the five we want to opt out of? I only ask because there are exactly five I'm not interested in, but I also don't want to expose myself to playing something I've already done...

Oh, yes, I'll add that in the FAQ now. You can request that your characters don't end up as the same thing and we'll make sure they're different.
